HISTORY & PHILOSOPHY
Arun & Urmil Puri, owners, opened Royal Khyber in Costa Mesa, California, in 1980. In 1998 the restaurant moved to South Coast Village across from South Coast Plaza at the invitation of the Segerstrom family, where it has been located for more than 17 years. Royal Khyber instantly became a hotspot in the Orange County dining scene. Always a favorite with those partial to Indian cuisine and those looking for a fine dining experience through ambiance and world-class service, RK is now becoming the go-to destination for discriminating vegetarians, vegans and those wanting to eat healthier.
Mr. Puri and his family are very health conscious and wanted “all the flavors without the fatty stuff.” Accordingly, RK has shifted away from using dairy products. Cream, butter and eggs are used sparingly, as are oils. Absolutely no cream, eggs or flour are used in the sauces. One can still order selected dishes cooked with ghee ( clarified butter ) upon request. Boasting many vegetarian choices, RK’s menu can accommodate vegan diets through vegetable substitutions. Mr. Puri said that “the whole emphasis has been to bring to the public a very flavorful and healthful cuisine, and not what people traditionally perceive Indian cuisine to be.”
To achieve this, some 38 different herbs and spices are used. Few of the dishes are genuinely spicy — the chicken vindaloo and the chicken madras are among the few exceptions. All foods are made to order, as mild or spicy as you request.
It is with pride that Royal Khyber uses farm-fresh local produce whenever possible. Our panner ( cheese ) and yogurts are created by hand in our kitchen, giving them their own unique taste. Nothing is spared to bring the best quality of ingredients to your table.
